In 2024, over 30 Hilton hotels in the Middle East, Türkiye, and Malaysia will join the Green Ramadan campaign to cut down on food waste. This effort aligns with Hilton's Travel with Purpose 2030 Goals, aiming for a 50% decrease in food waste sent to landfills.
Hilton Dubai Palm Jumeirah is excited to take part in this initiative. Throughout Ramadan, their Mowsem restaurant will offer daily Iftar meals made with locally sourced ingredients like meat, fish, and vegetables from nearby farms, thanks to their partnership with Fresh on the Table. They'll also feature plant-based dishes, reduce plastic use, and work with local food banks. The hotel will use Winnow's AI technology to monitor waste digitally, gathering data to help with future procurement and minimize environmental impact.
The hotel wants to raise awareness among guests about food sourcing and waste during Ramadan, a time when food waste tends to increase. Mowsem restaurant aims to inspire positive change during this holy month.
Emma Banks, Hilton's VP of F&B strategy & development for EMEA, emphasized their commitment to sustainability. They're working with Winnow and supporting UNEP West Asia's 'Recipe of Change' campaign to reduce food waste.
